My Favorite Mexican Dinners

Chicken Burrito Bowls

Burrito bowls are my favorite because I love piling on the toppings! The base is cilantro lime cauliflower rice, but they work with my cilantro lime rice or Mexican rice as well.

Slow Cooker Pork Carnitas

These carnitas are tender, juice and packed with flavor. This is an easy dump and go recipe that's great in tacos, enchiladas, or burrito bowls!

Ground Beef Enchilada Casserole (One Pan!)

I love enchiladas, and this recipe gives me all the flavors without the tedious rolling! If you prefer the classic, be sure to try my chicken enchiladas.

Crispy Baked Turkey Tacos

I made these so often when my boys were younger. If you prefer to use fresh corn or flour tortillas, be sure to read the recipe notes for instructions. That's my preferred method now!
