Hi Reader, Cinco de Mayo is coming soon, which means I have another excuse to eat more Mexican food! While I love tacos as much as the next person, I prefer to make enchiladas because I can assemble them completely in advance. Making dinner ahead is how I roll. :) My green enchilada sauce is my personal favorite because of its fresh, vibrant flavor. It's super simple and perfect for green enchiladas and this enchilada bake. I do crave my red enchilada sauce often as well, which comes together in about 10 minutes! It takes my chicken enchiladas and black bean sweet potato enchiladas to the next level. Serve them all with a side of cilantro lime rice or Mexican rice, black beans and Mexican sweet corn cake for the whole enchilada. :) What's your all time favorite Mexican dish?
