β Hi Reader, We kicked off this month by celebrating my son Joey's birthday on December 2nd, which included visiting the city of Caldwell, ID for the annual Caldwell lights display. It was super cold out, but completely worth it! Joey graduates from Boise State this Saturday with a BA in Kinesiology, and we couldn't be more proud. Now onto the food! While I love Thanksgiving dinner, one of the best things about Christmas dinner is that I have the freedom to change up the menu from one year to the next. Most of the time I prepare my slow cooker glazed ham with an array of sides on Christmas eve, then on Christmas Day we do a simple skillet lasagna, but sometimes I'll change things up with roasted turkey breast or even roasted chicken. All of the recipes I'm sharing are super simple so that you can relax and enjoy your holiday! Hello Reader! The countdown to Christmas is on...are you ready? I have my shopping done but I haven't done any holiday baking aside from my red velvet brownies and peppermint brownies. I'm leaving town tomorrow to visit family for Christmas, so my usual assortment of holiday cookies is looking unlikely this year.
