It's already mid-February, there's snow everywhere, and I'm dreaming of spring. Who's with me?

There's no sign of it on the horizon here in Boise, but aside from that, I am focused on bringing you more of what you're looking for this year in the way of quick and easy dinners.

And let's make them affordable while we're at it, because grocery prices are insane right now.

I'll be in my kitchen creating new recipes (and refreshing old ones), but until then, see the recipes below for some dinner inspo.

​Chicken Vegetable Stir-Fry​

This chicken vegetable stir-fry is a healthier alternative to takeout! Use whatever veggies you have on hand and make it vegetarian by omitting the chicken and using chickpeas!

​Ground Beef Tacos​

Taco night is a favorite in our house! While my family prefers ground beef, you can sub it with your favorite ground meat such as turkey, chicken or pork.

​Pesto Tortellini​

This is an easy, satisfying vegetarian meal that the whole family will love! Prepare homemade pesto in advance, or use your favorite store bought brand for a time saver.

​Butternut Squash Turkey Chili​

Chili is so easy AND affordable, and this is my favorite recipe. The warm spices pair so well with the sweetness of butternut squash! Omit the turkey to make it vegetarian and sub the squash with sweet potato if you prefer!

​Shrimp Fried Rice​

This is another take-out inspired recipe that involves minimal prep and leftover rice! Sub the shrimp with your favorite protein or enjoy a vegetarian version bulked up with a few extra veggies!
