I baked this loaf last week to kick off my pumpkin baking and did we ever enjoy it. It has a soft, tender texture thanks to almond flour and oat flour, plenty of warm pumpkin spice flavor, and dark chocolate chips.

Lunch: Tarragon chicken salad with apples

This is such an easy lunch using shredded rotisserie chicken! It's crunchy and creamy just the way chicken salad should be, and the fresh tarragon makes it next level.

Salad: Napa cabbage salad with Asian dressing

This salad is a reader favorite for good reason. It's so crunchy and packed with a sweet and savory Asian dressing. If you haven't tried Napa cabbage, this is the place to start!

Dinner: Marry me chicken soup

This soup is so hearty it eats like a meal. It comes together with rotisserie chicken (which you already have from the tarragon chicken salad). It's creamy, cozy and can be made with your favorite regular or gluten-free pasta.
