Hi Reader, We're already cruising towards the end of July, so I feel like the bottom is falling out of summer! I'm going to savor every bit of what's left by making some of my favorite recipes with summer's best produce. I've been buying large quantities of peaches, tomatoes, cherries, corn and summer squash as possible. And let's not forget berries! I've got (7) of my favorite summer produce recipes below, and you can bet I'll make them on repeat before summer is over. Sweet juicy peaches and tomatoes are one of my favorite combos, and when you add burrata you're just living right.
Corn: Grilled Steak SaladIt's hard to believe that corn can make such a difference in this steak salad, but it does. There's nothing like charred corn, and I wouldn't make this meal without it!
Blueberries: Blueberry Crumble BarsI've made these bars a few times this summer and I'm nowhere near done yet! The ratio of jammy blueberry filling and buttery oatmeal crumble is just right, and they're extra delicious with vanilla ice cream!
Tomatoes: Mediterranean Baked CodThis cod is one of my favorite summer meals and the sweet cherry tomatoes are definitely the star of the dish! This is fresh and light and takes just 10 minutes to prep.
Cucumber: Greek TzatzikiThe phrase "cool as a cucumber" describes this tzatziki perfectly. It's cool and creamy with plenty of grated cucumber, lemon and fresh dill. It's great as a dip with pita bread and crunchy veggies or use it as a condiment for grilled meats!
Cherries: Cherry ClafoutisThis may have a fancy French name, but clafoutis is SO easy to make. It's creamy and custard-like and will impress everyone that tries it!
Summer Squash: RatatouilleI look forward to summer every year so that I can make a big pot of ratatouille! This French vegetable stew is packed with summer squash, eggplant and fresh basil and is perfect with crusty bread. It's summer comfort food!

Hi Reader, I used to have a huge garden in California with (6) tomato plants, and I still didn't have enough tomatoes. In the summer, they're so sweet I can eat them like a peach. :) I don't have a garden anymore here in Boise (YET), but I'm still buying all the local tomatoes that I can and using them daily.
