Tomato recipes I make every summer


Hi Reader,

I used to have a huge garden in California with (6) tomato plants, and I still didn't have enough tomatoes. In the summer, they're so sweet I can eat them like a peach. :)

I don't have a garden anymore here in Boise (YET), but I'm still buying all the local tomatoes that I can and using them daily.

Tomato Recipes I Make Every Summer

Creamy Roasted Tomato Soup

This is proof that summer is soup season too. Roasting tomatoes intensifies the natural sweetness of the tomatoes, giving this soup so much flavor! It has a creamy, velvety texture that makes it so special.

Greek Salad

When I went to Greece, I ate Greek salad just like this every single day. When I make this in the summertime with peak season tomatoes and a block of good quality feta cheese, it transports me back to the Greek islands!

Pico de Gallo

Summer is the only time of year that I make pico de gallo because it's all about tomatoes having big flavor! This is so simple to make and I love it as a topping for tacos, burrito bowls, grilled meats or as a dip with chips!

Caprese Salad

Summer was made for this salad. I love using a variety of heirloom tomatoes for color and flavor, but anything goes. It's finished simply with olive oil and balsamic glaze and is perfect with crusty bread!

Small Batch Cherry Tomato Jam

Who said jam is just for fruit? This has a been a reader favorite for years for it's sweet, tangy flavor. It's great served with grilled meats and fish or as a spread for burgers, sandwiches or toast!
