What to cook in June

Hi Reader,

Summer is arriving this month, so bring on the grilling season, all the salads, and fruity desserts!

The markets are brimming with so much produce right now that I feel like a kid in a candy store, but it can also get overwhelming.

I have to reign myself in and really plan out what I'm going to make before I head to the market so that I don't overbuy. The last thing I want to do is waste food.

This week, I'm sharing some of my favorite summer recipes below, but you can visit the entire June seasonal produce guide for more inspiration!

What To Cook in June

Overnight Cherry Oats

This overnight cherry oats recipe tastes like cherry pie, only it’s gluten-free, vegan, and for breakfast!

It’s a great make-ahead recipe, too.

Italian Chopped Salad

This zesty, flavorful Italian chopped salad recipe is packed with crisp veggies, salami, chickpeas, olives, and is tossed in a homemade Italian dressing.

It’s a hearty salad that’s great for dinner.

Mediterranean Bean Salad

This quick Mediterranean bean salad recipe comes together in about 20 minutes and can be made in advance.

It’s a fiber-rich, filling lunch or side salad.

Greek Chicken Souvlaki

This Greek chicken souvlaki recipe will transport you to the Mediterranean coast with flavorful Greek oregano and creamy tzatziki sauce.

This recipe is one of my favorite ways to use the grill!

Mini No Bake Cheesecakes

This mini no bake cheesecake recipe makes individual cakes that are light and fluffy with a buttery graham cracker crust.

It’s a quick recipe you can make in standard muffin tins!

burger bowls

Hi Reader, I reshot my burger bowls recipe this week because I felt that the old version just wasn’t doing them justice. Now they're even more crave-worthy. They still have my juicy grilled burgers and burger sauce, but I added crispy air fryer roasted sweet potatoes and quick pickled red onions (coming soon!). I loved them so much that I made them a few days later with grilled turkey burgers. I'm completely obsessed! The post has not been updated with the new photos yet, but I included one...

Hi Reader, It doesn't get any better than berry season for me! Choosing a favorite is difficult, but if I had to, I'd say blueberries, because I use them the most. ☺️ This week, I've rounded up some of my favorite berry (and cherry!) recipes to help you make the most of them this summer. Whether you're using them in salads, jam, cocktails, or dessert, you'll find something delicious here. While you’re thinking about which recipe to try first, I want to share with you my favorite berry storage...

Corn and tomato salad

Hi Reader, Memorial weekend is here, which means it's the unofficial start of summer. And we have the hot weather to prove it -- it's in the high 80's here in Boise! What's your weather like? My holiday menu consists of grilled BBQ chicken, roasted sweet potato halves, broccoli slaw (this is my #1 go-to!) and blueberry crumble bars. If I was going to your house for a Memorial Day BBQ, however, I would bring one of the (5) summer side dishes below. They are tried and true favorites, super...
