What to cook in May

Hi Reader,

I can't believe we're in the last full month of spring and that summer is already on the horizon!

Personally, I plan to eat as much spring produce as I can before it’s gone. Asparagus, artichokes and peas are at the top of my list. But I'm also fully embracing the arrival of early summer produce like cherries, apricots and rhubarb.

This week I’m sharing four recipes that celebrate May produce, and one cherry dessert to welcome in the early summer fruit.

This recipe roundup includes dishes for every meal of the day.

And as always, you can find even more May produce recipes on the blog.

This Asparagus Salad recipe is fresh, vibrant, and easy to make, with asparagus, arugula, and tangy goat cheese flavors.

Crunchy walnuts add another layer of texture and my lemon vinaigrette keeps the flavors bright.

One Pot Italian Sausage Bow Tie Pasta

This One Pot Italian Sausage Bow Tie Pasta recipe calls for only 7 ingredients, including fresh (or frozen) spring peas, and 30 minutes of your time. Boom! Dinner is served!

It’s also a great dish for entertaining!

Cherry Claufoutis

This classic Cherry Claufoutis recipe is a creamy, custard-like dessert that’s not overly sweet and showcases early summer cherries in a delicious way.

It's an effortless, 6-ingredient dessert that’s as delicious as it is impressive!
