Happy August! Summer is winding down with kids going back to school, and I'm starting to see Halloween and fall decor pop in stores like Costco and Pottery Barn. Is it wrong that I'm excited about fall already? :)

Summer isn't over yet, and this is a busy time of year for so many with back to school season and end of summer trips and gatherings.

I'm sharing (5) easy dinners below that are quick to throw together on the busiest of nights.

5 Easy Dinners for Busy Nights

Air Fryer Chicken Fajitas

Talk about easy. These fajitas take 10 minutes to prep and cook up in just 15 minutes. No air fryer? Put everything on a sheet pan and cook at 400 degrees until a thermometer inserted in the chicken registers 165 degrees.

One Pot Ground Beef Stroganoff

Beef stroganoff normally takes much longer to make than 30 minutes, but this recipe makes it possible on busy nights! This is one of my favorite pasta dinners.

Shrimp Fried Rice

I just love fried rice, and this version is so much healthier than takeout. This comes together so quickly with leftover rice and frozen veggies. If shrimp isn't your thing, swap it with your favorite protein.

Burger Bowls

I make these bowls almost weekly, and I love that I can prep burger sauce and pickled red onions in advance if I'm using them. They're great with my grilled burgers, grilled turkey burgers, or air fryer burgers!

Teriyaki Salmon

This salmon is baked with my sweet, tangy homemade teriyaki sauce until tender and juicy. The sauce can be made in advance to make this meal go even more quickly!
