Sweet corn recipes I wait all year to make

Hi Reader,

I'm always excited for sweet corn season, and I've been buying it non-stop at the store. Bi-color corn is my absolute favorite!

Mostly I've grilled it to use in salads and a peach corn salsa, which was incredible over the cilantro lime chicken that I'll be sharing with you in the coming weeks. Prefer not to grill corn? Make my air fryer corn on the cob!

If you want the recipe for peach corn salsa, hit reply and let me know and I'll post the recipe!

I've linked (7) of the corn recipes I wait all year to make below. They include salads, dinners and appetizers, but if you need even more inspiration, be sure to browse all of my corn recipes as well.

What is your favorite way to use corn? Hit reply and let me know!

Happy cooking,

Marcie

My Favorite Ways to Use Sweet Corn

Mexican Grilled Street Corn Salad

Mexican street corn needs no introduction. I love it, but it's messy! This is the way that I prefer to eat it. It's fresh, smoky and perfect as an appetizer with chips, a side dish or condiment!

Grilled Fish Tacos with Cherry Tomato Corn Salsa

Summer dinners don't get better than this. The smoky grilled fish is topped with a fresh salsa and truly corn is the star! I love the texture that it adds.

Corn Dip Stuffed Jalapenos

Corn dip gives stuffed jalapenos a whole new meaning. The dip is so creamy and it's all topped with bacon. If you're not a fan of jalapenos, just prepare the dip and bake it in the oven until bubbly! And don't forget the bacon. :)

Grilled Steak Salad

Smoky grilled steak and corn were meant to be together, and this salad is proof. I want to eat this salad all summer long!

Corn and Tomato Salad

This salad is one of summer's finest and it's SO easy! It has just a few ingredients that truly shine together, and is perfect for any summer meal.

Summer Vegetable Soup with Pesto

This soup is proof that summer is soup season! Fresh or frozen corn work beautifully here with all the summer veggies, creamy white beans and pesto sauce!

Zucchini Corn Fritters

You might argue that zucchini is the star in these fritters, but I would disagree. The texture of the corn is what sets these apart -- they're not the same without it!
