Hi Reader, I'm always excited for sweet corn season, and I've been buying it non-stop at the store. Bi-color corn is my absolute favorite! Mostly I've grilled it to use in salads and a peach corn salsa, which was incredible over the cilantro lime chicken that I'll be sharing with you in the coming weeks. Prefer not to grill corn? Make my air fryer corn on the cob! If you want the recipe for peach corn salsa, hit reply and let me know and I'll post the recipe! I've linked (7) of the corn recipes I wait all year to make below. They include salads, dinners and appetizers, but if you need even more inspiration, be sure to browse all of my corn recipes as well. What is your favorite way to use corn? Hit reply and let me know!
