5 Healthier muffins that taste like a treat! 🌟

Hi Reader,

I spend a lot of time revisiting some of my old recipes to shoot reels for Instagram (are you following me there yet??). I shot one this past week for my almond flour blueberry banana muffins, and I realized that I hadn't made them in far too long.

That got me thinking that I should share some of my favorite healthier muffin recipes. We all love muffins right? They're perfect for grab 'n go breakfasts, snacks and even dessert.

The muffins I'm sharing below are made with either almond flour, oat flour or a combination of both, so they're packed with fiber and whole grains instead of empty calories. And they have the fluffiest texture!

They also include healthy fats and a minimal amount of unrefined sugars as compared to most muffin recipes.

I love prepping a batch to enjoy for the week, or I pop some in the freezer to enjoy any time a muffin craving strikes. :)

ALSO, you may have noticed that you didn't receive a weekly email yesterday with new recipes. I have decided to combine the new recipes each week into my newsletter so that you only get one email per week from me. Let me know your thoughts!

Which recipe are you trying first? Hit reply and let me know!

Happy baking!
Marcie

New this week!

Cabbage and Ground Beef Casserole

One day I wanted to make cabbage rolls, but I didn't want to put in that much effort. This recipe happened instead, and it's become a huge a favorite already. It is cheesy, low carb comfort food (there's no rice), and it's ready in about 40 minutes!

Irish Soda Bread with Apricots & Orange Zest

It's not St. Patrick's Day without Irish soda bread, and this one has a sunny twist with sweet dried apricots and the bright flavor of orange zest. There's no yeast whatsoever, hardly any kneading and it's ready in about one hour.

Hi Reader, April is just days away, and it happens to be my birth month. I thought it would be fun to share an OLD photo of me on my birthday. Yes, I grew up in the 70's as you can tell by the colors of our kitchen and how I was trying to feather my hair like Farrah Fawcett. I never played tennis either but just liked the shirt. 🀣🀣🀣 My birthday is on April 17th, so whenever it fell close to Easter my mom would make me an Easter bunny cake. I loved that cake and sometimes I think I need to...

Butter lettuce salad

Hi Reader, I was in Palm Springs for a few days this week. It was sunny and warm, and I got to wear shorts and flip flops for the first time in months. If that doesn't get a person in the mood for spring, I don't know what does. :) I definitely ate like I was on vacation, so I'm craving more salads than usual. I stocked up on plenty of greens and veggies at the grocery store last night after I got home so I have some salad prep to do today! Salads are truly the best way to get a wide variety...

Corned beef and cabbage

Hi Reader, When I was growing up, my mom made corned beef and cabbage every St. Patrick's Day, and I kept the tradition alive with my own family. To this day, it's one of my favorite meals, especially with a side of crusty Irish brown bread! If you're not a fan of corned beef, try my Irish beef stew or Guinness beef chili (the chili would be great with ground turkey as well!). I've got plenty more St. Patrick's Day ideas for you to check out below, which includes a couple of naturally green...
