5 Low Carb Dinners You'll Love (and survey results)! ❤️


January is all about eating healthier after all of the indulgences during the holidays, so I thought it would be a great time to share some satisfying, delicious low carb meals.

These meals are great if you're on a low carb diet, and for carb lovers (like me) to minimize carb intake and still feel satisfied.

You won't miss the pasta in my zucchini lasagna, and my egg roll bowl is better than takeout! 👊🏻

Burger bowls are perfect lighter game day food, my pork chops with creamy mushroom sauce make and impressive dinner any time, and my chicken Cobb salad is simply the ultimate. 💯

Before we get to the recipes, I want to say thank you so much to those of you that completed this year's survey! I got some amazing feedback, and I'm excited to get to work on implementing some of the things you're looking for the most.

I will be working on the following based on your feedback:

  • Meal plans. I'm thinking about creating monthly seasonal meal plans to be sold as a product or as a subscription. I'd love to hear your thoughts!
  • Master substitution list. This will include produce, spices, thickeners, pantry staples and so much more so you can have the confidence to swap out ingredients with what you already have on hand.
  • Herb and spices guides. These guides will outline the flavors of fresh/dried herbs and common spices (as well as specialty spices), and give you a multitude of ideas on how to use them in your dishes. There's nothing worse than purchasing a spice only to discover that you don't like it or waste it because you don't know how to use it.
  • Seasonal produce guides. I will provide posts listing all of the produce in season, ways to use them and seasonal swaps for each. Would you prefer this list to be (4) larger posts for spring, summer, fall and winter, or (12) monthly posts?
  • Freezer guide. Will include how to freeze meals/produce efficiently, how to thaw, etc. This will help minimize waste whether you're cooking for 4 people or 2!

This chicken Cobb salad is the ultimate loaded salad! It's tossed in a flavorful red wine vinaigrette and most of the components can be prepped in advance. It's perfect for meal prep lunch or dinner!
