Easy high protein lunches that satisfy 🌟

Hi Reader,

I started lifting weights a little over a year ago to get stronger and strengthen my bones. I realized that I wasn't getting enough protein, so I've really been trying to up my protein intake.

I try not to eat a lot of dairy, and I'm not a big fan of cottage cheese (which isn't too popular these days!), but thankfully there are plenty of other great protein sources that I love.

If you struggle to stay full between lunch and dinner, I have plenty of high-protein lunch options that will satisfy you, keep your energy up, and each one has minimal prep time.

Each recipe is packed with clean, real-food ingredients and plenty of protein to fuel your day. Whether you’re into salads, sandwiches, or one-bowl meals, you’ll find something here to make your lunch break the best part of your day.

What's your go-to high protein lunch? Hit reply and let me know!

Happy cooking!

July Seasonal Produce Guide

If you're looking for delicious ways to utilize summer produce, you'll find plenty of inspiration in this July produce guide!

Grilled Lamb Kofta Kebabs

If you've never had lamb kofta, you're missing out. And if you're not a fan of lamb, you can use ground beef! These kebabs are juicy, packed with warm spice flavor and they take about 10 minutes to prep!

Canned Salmon Salad

This salmon salad has been a go-to for me this summer. It's extra affordable with wild canned salmon (include the soft bones for a huge calcium boost!) and it takes just 10 minutes to make. I love it as-is or with crunchy veggies, or you can enjoy it in a sandwich.

Easy High Protein Lunches

Tarragon Chicken Salad

This is my favorite chicken salad. Crisp apple and celery add texture, and fresh tarragon makes it next level. My Sonoma chicken salad and curry chicken salad are great options as well!

Crispy Salmon Patties

These salmon patties are an affordable, high protein option that comes together in under 30 minutes. Serve with creamy, flavorful lemon dill sauce!

Chicken Burrito Bowls

These burrito bowls are so great for meal prep. They can be customized numerous ways, and they're perfect for leftover chicken, rotisserie chicken, or your favorite protein source.

Ham & Cheese Frittata

I eat frittatas for lunch often -- they're the perfect midday meal. This frittata is easy to prep and you can customize it with your favorite protein source or veggies!

Egg Roll in a Bowl

Get all the flavors of an egg roll in this high protein, low carb recipe! It comes together in about 30 minutes and it's great for meal prep.

I made my strawberry rhubarb crisp for our weekly Sunday dinner with our kids...

Grilled corn on the cob

Hi Reader, I'm super excited for the Fourth of July. We're going to a barbecue, so I'm going to bring a side...and probably something extra because that's how I am. πŸ˜‰ I'm not sure which dish(es) I'll bring yet though -- I'm so torn!
