It's finally cooled off here, and Labor Day is just weeks away. I don't know about you, but I feel the bottom falling out of summer. I plan to get outside as much as possible now that the smoke has cleared, and eat all the summer produce I can!

5 Recipes To Cook This Week

Breakfast: Blueberry Overnight Oats

This is one of the easiest recipes! They take 5 minutes to prep and they're so creamy and delicious. No wonder they're a reader favorite!

Lunch: Mediterranean Tuna White Bean Salad

This has been my favorite lunch this summer for good reason. It's high in protein and fiber, fresh veggies and it's flavor-packed! It's great for meal prep as it keeps in the fridge for up to 3 days.

Snack: Air Fryer Zucchini Fries

This is such a fun way to use up zucchini! It's quick and easy and if you don't have an air fryer, you can bake them at 400 or 425 degrees on a wire rack set over a rimmed baking sheet. Be sure to serve them with my Greek yogurt ranch dip!

Dinner: Easy Ground Beef Tacos

You can whip these tacos up in under 30 minutes, and top them with all of your favorite fresh toppings! My crispy baked turkey tacos are another easy, delicious option.

Dessert: No Bake Chocolate Peanut Butter Oatmeal Cookies

These are a "healthier" version of the classic. They've got just enough sweetness, there's no refined sugar or dairy and they're completely delicious. The coconut oil can be swapped out with the same amount of butter if that's what you have on hand.
