It's been so smoky here in Boise due to fires blazing in Oregon. It's been limiting my time outside tremendously, in which case I definitely haven't been grilling very often. I've been using my oven despite the heat, and air frying as much as possible!

I'm praying the fires clear up soon so that I can make the most of what's left of summer...I truly can't believe that it's August already!

Recipes I'm making in August

Southwest Stuffed Poblano Peppers

When I lived in CA I had a garden and grew poblano peppers, which is what inspired me to create this recipe. Poblanos are very mild, and they're stuffed with a flavorful, cheesy ground turkey and rice filling!

Ratatouille

I look forward to making this every summer when summer squash, eggplant and bell peppers are at their peak. It's great with crusty bread, your favorite protein, or I'm trying it topped with poached eggs soon!

Small Batch Fig Honey Jam

I finally scored some fresh figs so this jam is happening! I make this often in the summer and early fall to top my oatmeal, toast, or include on a cheese board. It freezes beautifully too!

Greek Orzo Salad

I've been craving this, so it's happening very soon. This is a lighter take on pasta salad and it's perfect for lunch or as a side dish with your favorite protein! Don't want pasta? Try my Greek quinoa salad.

Zucchini Chocolate Chip Muffins

These muffins have a soft, fluffy texture thanks to oat flour, and it doesn't get better than the chocolate-zucchini combo! These are a must for zucchini season.
