8 meal prep breakfasts for busy mornings


Hi Reader,

I'm not a morning person in the slightest. When I get out of bed, I head straight for my coffee maker, and I'm already ahead of the game if I've prepped something for breakfast in advance.

I like to change breakfast up, so it could be anything from overnight oats, muffins, hard boiled eggs or a hearty breakfast casserole (my favorite).

I've rounded up (8) of my go-to meal prep breakfasts below. Whether you're corral-ing kids to school, hurrying off to work or just not a morning person like me, you'll thank yourself for making breakfast in advance!

8 Nutritious Meal Prep Breakfasts

Bacon and Egg Casserole

My all-time favorite breakfast to prep is a breakfast casserole. This one is nice and hearty with plenty of bacon, peppers and greens, and you can easily customize it with your favorite veggies!

Blueberry Oat Flour Muffins

These are quite possibly my favorite muffins. They're incredibly fluffy with a soft, tender crumb thanks to oat flour and Greek yogurt. Oh, and they come together in one bowl!

Mini Crustless Broccoli Quiche

You won't miss the pie crust in these crustless quiche! They're rich and cheesy and packed with plenty of broccoli. They're the perfect grab 'n go breakfast!

Banana Oat Flour Waffles

I prep a batch of these when I have time to enjoy throughout the week. They can be stored in the fridge or freezer -- just pop in the toaster and serve with your favorite toppings. I love eating a waffle like toast topped with peanut butter, fruit and a drizzle of maple syrup!

Spinach Feta Frittata

This frittata has all the flavors of my favorite Greek spanakopita. It's a good source of protein, it's packed with baby spinach and creamy feta, and it's ready in about 30 minutes!

Coconut Cream Pie Overnight Oats

These have been a reader favorite since I published the recipe over 10 years ago. Greek yogurt gives the oats the "cream pie" effect and they're perfect for coconut lovers! Don't care for coconut? Omit it and add your favorite add-ins.

Cottage Cheese Egg Bites

I used to spend almost $6 for egg bites at Starbucks, then I started making these at home. They're so fluffy with creamy middles and come together in 30 minutes flat!

Zucchini Chocolate Chip Muffins

As you can tell, I love baking with oat flour -- it lends the softest, fluffiest texture to baked goods! And it's tough to beat the chocolate-zucchini combo. These are perfect for zucchini season!
