If you ever find yourself staring into the fridge at lunchtime wondering what to eat, you’re not alone. I'm truly winning when I have a plan and prep something ahead of time that I actually look forward to eating!

These easy lunch recipes are fresh, satisfying, and made with real ingredients. They're packed with protein and perfect for meal prep or quick assembly when you need something fast.

Easy Lunch Recipes to Make This Week

Sonoma Chicken Salad

One of the best and easy lunches is this chicken salad. It can be made with leftover or rotisserie chicken, and it includes grapes, crunchy celery, pecans and a sweet, tangy poppy seed dressing!

Mediterranean Bean Salad

This is mediterranean version of 3-bean salad! It's packed with beans and veggies, creamy feta and it's tossed in a vibrant Greek dressing.

Dill Pickle Tuna Salad

This tuna salad is creamy, satisfying and full of crunchy veggies and the briny flavor of dill pickles. Swap the mayo with Greek yogurt for a protein boost!
