Corn Season!I'm in disbelief that Labor Day is a week away, and that my son just started his last semester at Boise State. As usual, time is flying! While I'm ready for cooler weather and pumpkin season, I'm looking forward to celebrating the unofficial end of summer with a barbecue that will definitely include sweet summer corn. Whether it's grilled corn on the cob or a corn salad remains to be seen, but it just wouldn't be Labor Day without it. I also love the flavor and texture that corn adds to enchiladas, pasta salad, soup and stuffed peppers. It truly makes everything better!
