Hi Reader,

We've got beautiful weather here in Boise, which means I want to spend more time outside enjoying it. Translate that into I want to spend less time in the house (or hovered over the hot grill) cooking!

I've got some easy summer dinner recipes below that will help you do the same thing.

5 Easy Summer Dinners

Grilled Fish Tacos

These are fresh, satisfying and topped with a flavorful cherry tomato corn salsa. Don't want to grill? Bake or fry the fish, or air fry it using instructions for my air fryer salmon!

Chicken Vegetable Stir Fry

This is the perfect clean out the fridge meal -- you can use whatever veggies you have on hand. Serve over rice for a healthy dinner that's quicker to prepare than it is to order takeout!

Grilled Lamb Kofta Kebabs

These kebabs are loaded with warm spices, fresh herbs, and they’re deliciously juicy. They take about 10 minutes of prep then grilled to smoky perfection. Serve with creamy Greek tzatziki, pita or salad for the perfect summer meal!

Santa Fe Chicken Salad

This salad is high protein, loaded with flavor and texture, and tossed in a tangy lime dressing. Use rotisserie chicken as a time saver for busy nights!

Creamy Tortellini Pesto

Tender cheese tortellini is smothered in a fresh, homemade pesto sauce along with mushrooms, sun dried tomatoes and toasted walnuts. It’s a family friendly dinner that’s on the table in about 30 minutes!
