Hi Reader,

I got back from Kauai last Sunday night. I had a wonderful time (how could I not...I was in Hawaii!), but I was so happy to get home to cooler temps and zero humidity. πŸ˜‚

Needless to say, I'm craving home cooked meals after eating out for a week. And nothing hits the spot like a cozy bowl of soup or chili!

Soup is one of my favorite things to prepare for so many reasons:

  • It's an easy one pot meal. One pot means easy clean-up!
  • It's affordable. Prices are so high right now, and soup is a cost-effective way to feed a family.
  • It's a great way to consume more vegetables. Let's face it, salads can get boring!
  • It's great for meal prep. Soup tastes even better the next day and it's freezer friendly.
  • It's customizable. It's so simple to swap protein, veggies and more with what you have on hand in your fridge and pantry.
