Ingredient spotlight: almond flour

Hi Reader,

I love experimenting with various types of flours, and almond flour is one of my favorites. It's nutrient-dense, gluten-free, and can be used in baked goods or as a binder substitute for breadcrumbs in savory recipes.

Super fine almond flour is best known for giving a light, fluffy texture. Almond meal, on the other hand, contains the almond skins, which are much more dense and a little grainy in texture.

For this reason, almond flour cannot be swapped with almond meal. When in doubt, go with super fine almond flour for your recipes.

Almond flour can be a bit of an investment, but you can purchase a three-pound bag at Costco for $16.99, which is the best deal I've seen. I store it in the refrigerator and it keeps for months!

I also use this almond flour* from time to time, though it is more expensive than the Costco option.

Whether you're baking a cake or making pancakes, cookies or burgers, you'll be amazed at how easy and delicious it is to bake with almond flour.
